Meat sauce batch size tested w/BBG in AZ

12 Quart Batch

Meat 

Ground beef - 1lb
Ground pork - 1lb

2 Tomato Sauce - 28 ounce can 
2 Tomato Puree - 28 ounce can 
3 Crushed Tomato or a combo and/or Diced - 28 ounce cans

2 Onions
MSG - 1/4 cup
Salt - 1/8 cup
Granulated Garlic - 1/4 cup
Basil - 1/2 cup
Oregano - 1/4 cup
Parmesan cheese - added at the end - 1 cup
Sugar - added at the end - 1/4 cup

Robs variation: total of 2lbs groud beef (80/20), 2lb milk bulk Italian sausage and
1 lb ground pork.  Way meaty batch, some like some don't....


Blue Cheese Salad Dressing Batch for Home 
Note: 4 Quart Mixer

Note: a starbucks coffee scoop is an 1/8 cup measure

Blue cheese crumbles ( Stella, Treasure Cave Brands) 10 ounces
Imo 2 1/2 cups
Sugar 3/4 cup
Salt 1/8 cup
Granulated Garlic 1/8 cup
MSG 1/4 cup (if it is still being used)
Parmesan cheese grated not shredded 1/3 cup
Pepper 1 teaspoon
cider vinegar 6 liquid ounces
Buttermilk 8 liquid ounces
Mayo heavy, good stuff, mayo no whimpy shit...Fill the rest of the 4 Quart Mixer. est. 3.5 quarts Mayo
